Junior Enterprise helps Paris Creperie expand business

Paris Creperie, a single location restaurant in Brookline, Massachusetts, asked Cambridge College’s student-run management consulting group, Cambridge College Junior Enterprise (CCJE), to help them figure out how to grow their catering business. One graduate and two undergraduate students worked with Paris’ catering manager, Nick Mallia, and famed restaurateur turned consultant, Henry Paterson, to develop a go-to-market strategy for Paris. 

Over the 13-week project the student team analyzed the restaurant’s catering data to identify trends and segments, surveyed existing customers, interviewed prospective customers and redesigned Paris’ approach to sales and marketing. The team even came up with new menu layouts that would work better in their targeted market. 

“It’s another great example of how our students are able to apply their classroom learning to real-world problems. Our courses in the School of Undergraduate Studies and the Graduate School of Management are geared so that our students can add value day one no matter what the project,” said Robert Goldberg, Faculty Advisor for CCJE.
